When and How was Lydia's Lechon establish? How did it start out? What made you start it in the first place?

Benigno and Lydia De Roca were newly married and had to find a living for growing family. The business of selling lechon was sort of a family business from both side of the couple's family. The couple started the business both out of necessity and practically. After some time of being vendors of lechon paksiw, and with all of their 500 Php savings, the couple opened a meager but comely stall along F.B Harrison in Pasay City. The stall would become the jump-off point of the present chain of Lydia's Lechon.

Why do you think is lechon a staple when it comes to Filipino celebrations?

Lechon was become the centerpiece symbol of every Filipino celebration, other than owing to customs, traditions, and culture, but perhaps mainly because of its gustatory appeal during these occasions. The preparation of lechon is an indication of big celebration; the taste of lechon is distinctively festive itself.

What makes lechon very Filipino?

Lechon as a unique version of various roasted pig preparations of the world, is distinguished by its distinct flavor by infusion of choice spices, preparation, and cooking. Complemented by the liver sauce, it becomes more Filipino.
